FOOD FOR THE BODY

Peachy Chicken

4 boneless, skinless chicken breasts
4 T. peach or apricot preserves
1 small can peaches in light syrup
Italian seasoning

Place each chicken breast in the center of a large sheet of heavy duty aluminum foil. Spoon about 1 T. of preserves onto each breast. Top each breast with two or three peach halves or quarters. Sprinkle each breast with about 1/8 tsp Italian seasoning. (Go easy on the seasoning!) Fold each packet securely and place on a large baking sheet. Bake for about 1 hour at 350* or until chicken is no longer pink and juices run clear. Serve with brown rice and tossed salad. Each packet is worth 4 or 5 points, depending on size or breast and amount of peaches.
