Summer Broccoli Salad (from Weight Watcher's 20 Minutes Cookbook)
4 center cut bacon slices
1/3 c. light mayonnaise
2 T. plain fat free yogurt
1 tsp. sugar
2 tsp. cider vinegar
1/2 tsp. black pepper
1/4 tsp salt
4 c. chopped broccoli
1/2 c. finely chopped red onion
1/2 c. Craisins
2 T. toasted, chopped pecans
Cook bacon in large nonstick skillet over medium heat, until crisp. Remove bacon from pan; crumble and set aside. Combine mayonnaise and next five ingredients in a bowl. Add broccoli, onion, and raisins; toss to coat. Cover and chill until ready to serve. Sprinkle with bacon and pecans before serving.
Serving size 3/4 c. Points value 3.

I made this for our Memorial Day picnic and it was SOOO GOOD! You've got to try this!
I'm excited! Question, though, what is center-cut bacon? Is all bacon center-cut, or is it a specific kind of bacon I can look for!?
As far as I know, center cut bacon is still made of pork, but has 30% less fat. I found it right next to the regular bacon at Smith's. It's thicker and takes a little longer to cook, but it was really yummy!
