Southwest Chicken and Black Bean Salad
1 pkg. precooked grilled chicken, Southwestern flavored (found near lunch meat)
1 bag romaine
1 can corn, well-drained
1 can black beans, drained and rinsed well
1 or 2 Roma tomatoes, chopped
1 T. taco seasoning
2-3 T. olive oil
lime juice
tortilla strips or chips
Toss salad ingredients. Mix taco seasoning, olive oil, and lime juice. Add desired amount of dressing to salad and toss well. When serving, garnish with tortilla strips. With 1/2 c. tortilla strips, this recipe is 6 points per serving, Each serving is approximately 1 1/2 c.
