Easy, Healthy Chicken Kabobs (from http://www.1001recipe.com/)

2 boneless, skinless chicken breast halves
2 T. olive oil
1 T. fresh lemon juice
1 1/2 T. chopped fresh parsley
1 tsp. paprika
1/4 tsp. cayenne pepper or crushed red pepper (optional)
salt and pepper
Cut chicken breasts in to 1/2" cubes. Mix remaining ingredients. Add chicken to the marinade. Refrigerate for 1 to 2 hours. Thread chicken onto bamboo or metal skewers. (I get mine at the dollar store in packs of 50.) Grill for 5-10 minutes, turning frequently.
