ITALIAN WHITE BEAN DIP (adapted from http://www.weightwatchers.com/)

19 oz. canned cannelini beans, drained and rinsed
1 T. lemon juice, or to taste
1 tsp. lemon zest, or to taste
1 T. water
1/8 tsp. salt, or to taste
1/4 c. store bought or homemade pesto sauce
1 medium plum tomato, diced, divided
Place first five ingredients in a blender and process until smooth. Put mixture into mixing bowl and fold in pesto and all but 2T. of the tomatoes. Refrigerate for 30 minutes. Top with remaining tomatoes and serve with veggies, crackers, or pita chips. (Additional points)

Sorry I just read this, I'm a slacker, too. But I had to laugh that your recipe calls for pest sauce. Ha!!This sauce is made from which pest? Hee hee. Okay, okay. I'm done giggling like a schoolgirl now. Carry on.
LOL I didn't notice that! I guess it would be a great recipe to make when my kids are driving me nuts!!
